Meet a Cork Chef

On Wednesday, we met Chef Eoin O'Reilly of House Cafe at Cork Opera House. He visited the jury at the school and started the day by showing us how to make a delicious homemade meringue.


Then the girls took him out to show him their school veggie garden. We tasted and tested the various herbs and spices, and even cut off some rhubarb for our dessert...

Back in the classroom, Eion used the parsley from the garden to make a pesto.

The meringue finished cooking as he worked on the pesto. It looked BEAUTIFUL.


The girls whipped up the cream for the top. 




And... the final product. GORGEOUS. AND DELICIOUS!!


While we cooked, Eoin passed out recipes and answered questions about his life as a chef. Turns out that he's been a chef for almost 18 years (despite how young he looks), he travelled for a long-time through India and Australia (he ate kangaroo!) and has even cooked for some famous people (a President of Ireland). We loved having Chef O'Reilly visit... and can't wait to try his truffles at the Opera House Cafe sometime soon.
