Buttermilk Pancakes


            Flapjacks are an american staple and will continue to be one for as long as the breakfast rituals of this country stay alive.  I really can't think of any smell that triggers as many memories as black coffee, bacon, and pancakes does.  This recipe is failsafe.... I swear.  Follow it exactly and you'll have incredible pancakes every time!


Buttermilk Pancakes Recipe:


-Accurately measure and mix all the ingredients in a bowl until very smooth, but make sure not to over mix because  you can overwork the gluten in the flour causing density in the cakes. *As soon as there are no lumps, stop mixing.

-Pour the batter, in measured proportions (1/2 cup yields an ideal cake), into a pre-heated (low-medium flame) non-stick or seasoned cast iron pan and cook for 3 minutes or until golden brown. *Gently lift the cake with a spatula to peak under and observe the color before flipping.

- Flip the cake over and cook for another 3 minutes or so, then turn out onto a plate and continue cooking the rest of the batter until finished.


Ingredients:

1 cup All purpose flour
1 tsp Baking powder
2 tbsp sugar
3/4 cup buttermilk
1 tbsp melted butter
1 large egg
pinch of salt
